Besides being fatal are there any common symptoms humans note if they have been bitten by an infected? Would death by the epidemic be slow (2-3 weeks) or near instant?

A consensus has been made:
It would affect them like the flu or a plague. Causing tremors or seizures, fever, hallucinations, vomiting, and of course the staples of violence and turning blood to coagulated muck.
The victims would be feverish, coughing up black, dead tissue, gangrenish symptoms at infection site. Death occurs in about a week, no longer than two weeks if the human has a strong will and/or strong immune system.
Violent symptoms include the same things infected pokemon go through, or like the zombies in 28 days later, but not so long lasting.
Children, the sickly and elderly would die in a matter of days, due to a weak immune system.
